		<description>Yum! We love Pico, too!! I pretty much make mine the same way... but here&#039;s another variation that&#039;s good on fish:
1 c. chopped mango
1 c. sliced banana
1/4 c. chopped fresh mint
2 T. orange juice
1 tsp. grated lime rind
1 T. fresh lime juice
1 (8 oz. can)--or fresh is best! pineapple chunks, drained
1 serrano or jalapeno--depending on what degree of heat you like--seeded and chopped

Great on fish or chicken!!

P.S. Love the pic of Jim in S.D.!! How did you love Mt. Rushmore?? What else did you do?</description>

Mango Salsa
2 large ripe mangoes
1/2 red bell pepper
2 Tbsp. minced red onion
1 Tbsp. chopped cilantro
1-2 Jalapeno pepper (+seeds if you like it hot)
2 Tbsp. Lime juice
1 Tbsp. lemon juice
salt and pepper to taste

I like it on Tilapia or swordfish steaks!</description>
